Honjozo

Definition: Premium sake that is produced with rice that is polished down to 70% or less, and has distilled alcohol added before pressing. It is important to mention that the addition of alcohol to sake of this level is a brewing technique employed to achieve a certain taste profile. Honjozo is also known as salarymans friend, because the style is clean and smooth, which allows for easy all night nipping.
