Fukucho Kusa Nama - Junmai Daiginjo Hattanso
草 生 酒 純 米 大 吟 醸
This refreshing Namazake is Imada shuzo's answer to summer sake. In several ways, this sake expresses the qualities of the Hattanso rice variety very directly. Brewed without pasteurization (Nama), without dilution (Genshu) or use of carbon filter (Muroka). The aroma is predominant in the taste experience, it is large, fruity and intoxicating. Scents that remind one of the experience of being at a sake brewery, among the tanks, where the active fermentation makes the air thick with notes of tropical fruit.
Drink Kusa Nama with charcoal-grilled summer mackerels and Japanese potato salad. The sweetness in this sake will also complement steamed mussels, with fettuccine and pecorino. A mild-mannered Ceviche with monkfish and cilantro, would also be very dynamic with this lively Junmai Daiginjo.
