From the legendary Yucho Shuzo brewery in Nara prefecture comes a beautiful "first press sake" (Shiboritate). True to the tradition of freshly squeezed sake, it has only been pasteurized once to retain the bright acidity of young sake. Yucho Shuzo has a unique bottling method that allows them to conserve a generous amount of residual Co2 from the tank. As you may guess, the sake pops like a Crémant when opened. The very fine bobbles gives a soft mouthfeel at first, before splashes of fresh and bright acidity takes over. The colder the sake is in the glass, the stronger acidity. A second taste gets you closer to the broad spectrum and we are reminded that this is indeed a Junmai Daiginjo. Fine notes of young fruit spreads across the palate, particularly that of lichee and passionfruit. A rare local ricetype named Akitsuho was used for this sake. Yucho Shuzo has been instrumental in conserving nearly extinct rice varieties of their home region of Nara.
This is a sake for a special evening, perfect as an aperitif. But you can also have some fun pairing it with delicate food, such as caviar, raw scallops or soft cheeses like Brie and Chévre.
Drink it slightly chilled, a few degrees below room temperature. Or colder if a stronger acidity is preferred.
