Omachi Junmai Daiginjo
We are very excited to be able to offer a Premium Junmai Daiginjo made with the prized rice strain Omachi. The earthy sweetness that characterises this Omachi sake from Tatenokawa, makes it clear why brewers go to extraordinary lengths to make it. The fermentation process is notoriously difficult with Omachi rice and add to that cultivation complexities due to very long stalks more prone to damage by wind and weather.
Very lively on the palate, the first impression of this sake is pure refreshment, before revealing a lovely mellow depth.
Serve it chilled at 15 degrees, with crisp greens, cheese or smoked fish.
