Manotsuru "Toki no Karasu" Junmai Ginjo
A quintessential sake from the lineup of Obata Shuzo. Brewed with the Koshitenrei rice strain that was developed in Niigata for their soft water terroir. This Junmai Ginjo with its round and gentle demeanor, is the perfect counterpart to our two dry sakes from Obata Shuzo. From initial sips, it is clear that we have a sake on the fruity side of things. Particularly, ripe fruit notes of pear and cantaloupe are prominent as the taste deepen on the palate. In the nose we get a bright and breezy aroma of green melon and rice. This is a sake that can easily be enjoyed without food, as an aperitif.
If you do serve it with food, consider pairing it with tangy, fresh cheeses such as chévre or fromage frais made from sheep milk. A creamy pasta dish, a la Cacio e Pepe would also be a dynamic match. As would crisp and raw vegetables like green asparagus, kohlrabi or in-season cherry tomatoes.
